Located within the tumultuous waters of the North Sea, Under emerges as a groundbreaking restaurant that combines the realms of culinary arts and marine research.

To enter this restaurant is an adventure within itself.  Located on the edge of a municipality in Norway called Lindesnes, one must venture through the rocky wilderness of Northern Europe before approaching a structure that emerges from the edge of the ocean.

This innovative building was envisioned by the architecture firm, Snøhetta to exemplify Under’s ethos. Immersed five meters below the surface, the panoramic view of the seabed serves as a visual gateway to the sea, creating an intimate connection between the guests and the captivating wildlife beyond. This exclusive vantage point provides a rare glimpse into the marine ecosystem of the North Atlantic Ocean harboring marine life such as cod, haddock, halibut, mackerel, and more.

Under equally values marine research, architecture, and gastronomy. By highlighting the coexistence of life on land and in the sea, this establishment proposes a fresh perspective on our relationship with our surroundings—above the surface, under the water, and alongside the vibrant life of the sea.

With careful consideration for its geographical context and marine neighbors, Under's design ensures a harmonious integration with its environment. Over time, the concrete shell of the structure will transform into an artificial reef, inviting limpets and kelp to make it their home.

The robust concrete walls, anchored against the rugged shoreline, are built to withstand the pressures and shocks of the tempestuous sea conditions. Resembling a sunken periscope, the restaurant's colossal acrylic windows provide an ever-changing view of the seabed, adapting with the seasons and the fluctuating weather conditions.

Lindesnes, known for its unpredictable weather patterns that oscillate between tranquility and tempestuousness, sets the stage for an awe-inspiring experience. Guests can find accommodation at Lindesnes Havhotell and arrive at the remote site via car or private boat as specified on the website. The untamed outdoors give way to the serene and welcoming oak-clad foyer.

Symbolizing the journey from land to sea, the textile-clad ceiling panels evoke the colors of a sunset sinking into the ocean, accompanying guests on their descent down the stairs. The soft hues create an atmosphere of tranquility and anticipation, setting the stage for the extraordinary voyage that lies ahead.

Stepping inside the restaurant, a warm and inviting ambiance envelops patrons, evoking a sense of wonder and intrigue. The air is filled with an undeniable aura of mystery, hinting at the remarkable journey that awaits them.

Under seeks to redefine the boundaries of dining by immersing guests in an extraordinary fusion of culinary excellence, architectural brilliance, and a deep appreciation for the marine world. Marching to the forefront of this groundbreaking establishment is Head Chef Nicolai Ellitsgaard, whose culinary expertise hails from Scandinavia, Denmark, and Norway. 

Since joining Stig Ubostad’s visionary restaurant in March 2019, Ellitsgaard has devoted himself to the use of local ingredients and innovative interpretations of traditional cuisines. His reinvention of the classic Norwegian dish Fiskepudding, for instance, involves masterfully seasoning quality fish with aged herring roe. Additionally, Ellitsgaard has discovered a seaweed in Norway that imparts a truffle-like flavor, which he skillfully incorporates into his creations. As a forager, hunter, and fisher, Nicolai Ellitsgaard possesses extensive knowledge of the land and the intricate workings of the ecosystem, fostering a profound and intimate connection with the food he prepares.

Under is committed to harmonizing quality and care by showcasing wild ingredients that celebrate the unique produce of each season, particular to their remote corner of the world. Through their Immersion Menu, Under pays homage to Norway’s finest seafood through a gastronomic tasting menu consisting of approximately 15-18 delicacies inspired by the changing seasons. To complement the cuisine of Head Chef Nicolai Ellitsgaard, Under's Sommelier has curated a pairing menu that creates the perfect harmony with the meal.
